Roasted Tomato and Basil Soup
Looking for something hearty yet light and creamy that will literally melt

ripe juicy tomatoes, white onions and garlic with fresh herbs and oven
roast them to perfection. Then we add our luscious chicken stock and
simmer the soup till the flavors have melded. The broth, the tomatoes and
the onions are then pureed and strained to give it a smooth, bisque like
consistency and a silky, velvety texture that will drive your taste buds
absolutely crazy. The final benediction comes when we drizzle a few drops
of the finest first cold pressed extra virgin olive oil, then gingerly place a
fresh sprig of Genovese basil on top and garnish with a piece of our award-
